Since the industrialization of swine production in the late 1900s, swine farms in the United States, as well as in Europe, have largely become consolidated. Objectives: This study was conducted to evaluate the supplementary effect of higher concentrations of various dissaccharides on processing yield, major physicochemical properties, and sensory attributes of Chinese-style pork jerky (CSPJ).
